Itsasmendi 7 was the txakoli that changed the course not only of the winery but of Txakoli itself, opening an unreturnable path?
The presence of the Cantabrian Sea and the Pyrenees give us a markedly Atlantic character, making us different and unique on the national wine map. Our climate, geological diversity, microbiological richness, and spontaneous vegetation give us a differentiating character.
That is why, in 2003, we decided to take a qualitative leap and create Itsasmendi 7, as the first aging Txakoli with a double objective; on the one hand, to make a gastronomic txakoli and on the other to have a product that can be aged in the bottle. It is a source of pride to have opened this path for other txakoli wineries and to have obtained so much recognition over these years from the specialized press, professionals in the hospitality industry and of course, from the final consumer. Itsasmendi 7 has received two Gold Bacchus and several Silver Bacchus in different vintages.
From 2003 to 2008 it was basically produced as a wine from a plot located in Leioa (Hondarrabi Zuri Zerratie) and with approximately 15% Riesling blend. From 2009 onwards it was a blend of various sub-plots, produced in different 2000, 5000 and 7500 vats matured on their own lees.
The number 7 represents perfectionism, wisdom and idealism and is undoubtedly a magic number.
Since ancient times it has enclosed an aura of mystery, establishing a bridge between heaven and earth. The 7 classical planets form a sevenfold whole and a peculiar relationship is established with the 7 deadly sins: Sun (pride), Moon (laziness), Mercury (envy), Venus (lust), Mars (anger), Jupiter (gluttony) and Saturn (greed).
Itsasmendi 7 has been a personal and different Txakoli from the beginning. A Txakoli that elegantly transmits the variables that occur each vintage and that led us in 2008 to start a project in which each vintage is personalized through a photograph taken by different artists and that represents some aspect related to the production, elaboration or marketing that occurred that year in the Winery.
This has allowed us to create a collection of contemporary photographs that are nothing more than the history of the winery through images.
