Under the name “Paradisuak” – Basque for ‘Paradise’ – this project was created with the aim of bringing out the unique character of each plot of land. Those with most personality are selected to participate in the coupage, and just a few bottles are produced from each one.

Paradisuak LEIOA 2020
100% Hondarrabi Zuri.
In a search for the soul of each of the unique vineyards that make up the natural ecosystem, which we refer to as imperfect pieces of paradise, Peruri (Leioa) is a vineyard that features Hondarrabi Zuri vines and a first week of ripening, made in 17 hL concrete egg vats and aged for 15 months with the natural movement of its fine lees. Long aging in concrete egg, preserving a young appearance due to its pale hue with greenish flashes.

Paradisuak GERNIKA 2019
100% Hondarrabi Zuri Zerratie.
In the search for the soul of each of the unique vineyards that make up the natural ecosystem, which we refer to as imperfect pieces of paradise, Txirene is a highly diverse multi-varietal vineyard that opens up a wealth of possibilities for wine making. This 2019 wine is made from Hondarrabi Zuri Zerratie fermented with its skin and aged for 7 months in red earthenware jars, then 3 months in French oak barrels, previously used to age Txakoli red wine.

100% Hondarrabi Zuri.
In the search for the soul of each of the unique vineyards that make up the natural ecosystem, which we refer to as imperfect pieces of paradise, this vineyard, which features Hondarrabi Zuri and Hondarrabi Zuri Zarratie varieties and a third week of ripening, is located at an altitude of 265 m on terrain with a 35% slope. Calcareous slate. This vintage is expressive and complex with citrus, fruity, floral and sweet notes from barrel aging, as well as a balsamic background that gives it freshness.
